2 large sweet potatoes, peeled
3 Tablespoons Olive Oil
1 Tablespoon Jamaican Jerk
1 teaspoon salt
Preheat oven to 425 degrees.
On a cutting board with a sharp knife, cut potatoes in half lengthwise. Place flat side of halves on cutting board. Cut each half into 4-6 pieces, lengthwise. You should have 20- 24 potato wedges. Place wedges in a large bowl, drizzle with olive oil, toss with Jamaican Jerk and salt. Spread a single layer of wedges onto a foil lined baking sheet. Make sure wedges are not touching so they brown evenly. Bake fries for 12 minutes; flip and bake for an additional 12-15 minutes until fries are soft inside and browned on the outside.
