1 ½ cups unsalted butter, room temp (3 sticks)
2 cups brown sugar
½ cup molasses
1 Tbsp Alchemy Breakfast & Baking Blend
2 large eggs
2 tsp baking soda
4 cups all purpose flour
3 Tbsp white sugar
On medium speed, blend butter, sugar, and molasses for 4 minutes. Add Alchemy Breakfast and Baking Blend. Blend for additional minute. Scrape down sides of bowl.
Add both eggs. Blend for an additional minutes. Scrape down sides of bowl. Add baking soda and one cup of flour at at time, blending well between additions.
Using a teaspoon or a small scoop - portion into 42 balls. Roll gently in white sugar.
To bake: Preheat oven to 375. Line baking sheets with parchment paper. Place sugar rolled balls on baking sheet, leaving space between for spreading. Lightly press down on top of each ball, flattening slightly. Bake for 8 to 10 minutes. Transfer cookies to wire rack to cool.
