3 cups whole cashews
1 egg white
3 T sugar
3 T Spicy Thai Blend
Preheat oven to 300 degrees. Line a baking sheet with foil. In a medium sized bowl, beat egg white until soft, foaming and no clear liquid is in the bottom of the bowl. Add sugar and spice blend. Mix well. Add cashews and coat thoroughly. Spread mixture evenly in a single layer on baking sheet. Bake for 15 minutes. Remove from oven. Using metal spatula, toss, stir, and separate nuts. Return to oven for another 10 minutes. Remove from oven, toss, stir and separate and place baking sheet on a cooling rack. Nuts will crisp as they cool.
