2 lbs thick cut bacon, diced
2 large yellow onions, finely diced
4 shallots, minced
1 cup brown sugar
½ cup maple syrup
⅔ cup apple cider vinegar
1 Tbsp Alchemy Chili Blend
In a dutch oven or heavy pot, render bacon over medium heat until crisp. Remove bacon and drain on paper towel lined plate. Remove all but 2 Tbsp bacon drippings from pan. Saute onions and shallots until soft and starting to carmelize, about 9-10 minutes. Add Alchemy Chili Blend. Saute for 1-2 minutes until you can really smell spices releasing, Add sugar, maple syrup, and vinegar. Stir until well mixed. Return cooked bacon to pot. Stir to combine all ingredients. Reduce heat to medium. Let simmer for 8-10 minutes stirring frequently until thickened. Using an immersion blender, pulse through mix until partially blending - leave plenty of texture - this is not a paste. Cool completely and package.
